Eat Love - Nutri Tip #16

Via Pinterest

Eat Love - The best fish salad!

Photography and Food Styling . Samanta McMurray

I must confess!

I heard that is still Summer in Portugal. Well here, I already put my wool coat and my scarf to hit the NY streets in the morning and my home is already heating up!
Let's say that I can always pretend that is summer inside my appartment, so in order to match the weather I made a delicious and fresh fish salad dedicated to my sunny country...Portugal!
Super delicious and easy to make, specially if you have some fish leftovers! Any fish would suit!

Luís, this one is dedicated to our lovely Portugal!

Ingredients

1 piece of tilapia (or other fish that you wish)
1 lime
salt and pepper to taste
1 drizzle of olive oil

1/4 red cabbage
1 medium tomato
1/2 onion
Some coriander

Let's start by preping the fish! It can be just boiled fish but this one is baked in my own special way!
1. Put the fish on a piece of parchment paper and season with lime juice, salt, pepper and olive oil. Wrap it evenly and place it in the oven at 400º for 20minutes aprox.
2. While the fish is cooking let's prep the salad by chopping the red cabbage, onion and tomato into little cubes and season it with coriander, olive oil, salt and pepper.
3. Take the fish out of the oven and unwrap it (be careful so you don't burn yourself with the hot steam). Cut the fish into chunks and place it on top of the salad when serving!
