Eat Love - Banana&Tangerine Parfait delight!

Eat Love - Weekend tuna salad!

Fotografia Eat Love

On a sunny weekend, I apologize for my entusiasme but FINNALLY (!!!), there's nothing better than a quick lunch to go outside and enjoy the January sunlight!
I propose a tuna salad. I know, it sounds too easy and random but I promisse this one is a very special and nutritious meal!

Ingredients

. 1 can of black eyed peas

. 3 cans of tuna in water

. 2 small onions

. 4 medium potatoes

. 3 eggs

. 1/4 of purple cabbage

. Fresh coriander to taste

Dressing

. Juice of 1 lemon

. 3 tbs of olive oil

. pinch of sea salt

. fresh grounded pepper

. Fresh coriander

Strain the black eyed peas and wash them with water. Grind the onions and the purple cabbage  on a food processor. Boile the eggs and the potatoes with a pinch of salt.
On a salad bowl add the beans, the onion and the cabbage. Let the eggs and potatoes cool down and then cut them into cubes and add to the salad mix.
For the dressing put all the ingredients on a mixer and mix it till it gets smooth.
Finish with some fresh coriander on top and serve the dressing aside.
