Eat Love - Double chocolate muffins!


Ainda me lembro  em tempos idos (e que bons esses tempos...) de ser a menina das sobremesas, a neta que fazia parte dos doces mais gulosos do Natal que se tinha de lembrar constantemente de dobrar ou até triplicar a receita do bolo/mousse de chocolate para os deleites da família. Pois esses tempos já passaram e com eles os meus devaneios de pasteleira amadora e hoje em dia é raro fazer bolos.
Muito possivelmente por essa mesma época se estar a aproximar, ou só mesmo porque sou mulher e como boa mulher estou no direito de ter desejos regados a chocolate, duplo (!!!), apeteceu-me fazer esta delícia denominada por mim de oitavo pecado mortal da pastelaria - O Muffin de chocolate duplo com cobertura de iogurte de avelã. 

E só porque estamos quase a chegar ao Natal digo-vos que estes pequenos, ainda que tenha tentado usar alguns produtos saudáveis, são o meu mais recente guilty pleasure

Acho que  colocá-lo na categoria de pecado faz-lhe justiça. 



Ingredientes

* 300g de farinha integral

* 80g de cacau magro em pó

* 1 colher de chá de fermento em pó

* 1 pitada de sal

* 250g de açúcar amarelo

* 1 copo de azeite

* 2 ovos

* 130g de chocolate preto em tablete

* 12 colheres de sopa de iogurte grego

* 1 mão cheia de avelãs

Pré-aquecer o forno a 180º. 
Preparar um tabuleiro de 12 muffins com forminhas de papel para muffins. 
Misturar a farinha, o fermento, o cacau e o sal. Reservar.
Numa taça diferente misturar os ovos, o açúcar e o azeite. Juntar as duas misturas e envolver bem até obter uma mistura homogénia. Partir o chocolate da tablete aos pedaços e juntar à mistura.
Dividir a massa pelas forminhas de papel.
Levar ao forno entre 18-20min. Fazer o teste do palito para ver se estã cozidos. Retirar do forno e deixar arrefecer numa grelha arejada por baixo.
Misturar o iogurte grego com avelã triturada e servir os muffins com uma colher de iogurte por cima!

I still remember back in the old days ( and how I loved those days...) when i was the dessert little girl, the grandaughter that made the most yummy cakes at Christmas and had to remember to double the chocolate fudge cake recipe to delight the guilty family ones.
But those days are gone with my amateur baker skills! 
Quite possibly because of the beggining of X-mas season or just because I'm a woman with guilty chocolaty desires, I am finding myself baking and thinking about baking quite often. It happens to start with these sinful little ones...Double chocolate muffins with yogurt and hazelnut frosting.

And just because we are happen to be on Christmas time I can asure you that this is my most recent December guilty pleasure!

I really think that naming this a sin is fare enough.

Ingredients

* 300g of whole weet flour

* 80g of cacao

* 1 teaspoon of baking powder

* 1 pintch of salt

* 250g of brown sugar

* 1 cup of olive oil

* 2 eggs

* 130g of dark chocolate

* 12 spoons of plain greek yogurt

* 1 han full of hazelnuts

Pre-heat the oven at 350º.
Prepare a 12 muffin skillet with paper cups.
Mix the flour, the baking powder, the caco and the salt. Set asside.
On a bowl blend the eggs, the sugar and the olive oil. Mix the dry and the wet ingredients untill you have a smooth creamy texture. Chop the chocolate bar into pieces and add to the dough.
Divide the dough in the 12 muffin cups.
Put it in the oven for 20min (aprox.) or untill the toothpick comes dry.
Take them of the oven and put them on a grid to cool down.
Mix the yogurt with the chopped hazelnuts and add 1 tablespoon on each muffin to serve.

Eat Love - Pumpkin & Coconut cookies!


Com tanta abóbora ainda armazenada cá por casa não há nada como aproveitá-la até aos últimos pedaços e tentar inventar algo diferente. 
Confesso que não sou muito de bolachas, mas deu-me um gozo tremendo fazer estas, que, embora sejam uma versão a atirar para o scone/soft cake têm tamanho de bolacha e são práticas para levarmos connosco na carteira.
Para uma versão mais saudável aconselho a não fazer o último e pecaminoso passo!

Ingredientes para 10 bolachas

* 7 colheres de sopa de farinha integral

* 3 colheres de sopa rasas de açúcar mascavado

* 2 colheres de sopa rasas de linhaça dourada moída

* 150g de abóbora assada

* 1 ovo grande

* 2 colheres de sopa de côco ralado 

* 1/2 copo de leite de amêndoa

* 1 colher de sopa de óleo de côco

Chocolate branco a gosto

Em primeiro lugar misturar a farinha, o açúcar, o côco ralado e a linhaça. Adicionar o leite de amêndoa, o óleo de côco, o ovo, misturar e por fim adicionar a abóbora assada. Misturar tudo até obter uma pasta homogénea.
Pré aquecer o forno a 180º.
Forrar o tabuleiro do forno com papel vegetal e colocar uma colher de massa de cada vez de forma a ficarem separadas umas das outras. Achatar ligeiramente a massa com a parte de baixo da colher. 
Cozinhar até as bolachas dourarem (aprox. 20 mim, conforme o forno) e ir vigiando. 
Retirar o tabuleiro e adicionar o chocolate branco laminado enquando as bolachas estiverem quentes. 
Deixar arrefecer completamente. Guardar num frasco hermético até 7 dias.


With all these large amount of pumpkin stored in my fridge, all I can do is try to create amazing recipes with this amazing and  versatile ingredient.
I must confess that i'm not a big fan of cookies, but I really enjoyed baking these ones. Although they are a mix between a scone and a soft cake they have the size of a cookie and happen to be very "on the go".
For a healthier version I recommend not doing the last synfull step!

Ingredients ( 10 cookies)

* 7 tbs of Whole wheat flour

* 3 tbs of Brown sugar

* 1 tbs of Grounded gold flaxseed

* 1 egg

* 150g of Baked pumpkin

* 2 tbs of dry coconut flakes

* 1 cup od Almond milk

* 1 tbs of coconut oil

* White chocolate 

First mix the flour, sugar, coconut flakes and the flaxseed. Add the milk, the coconut oil and finnally the pumpkin. combine all the ingredients till you have a soft mixture.
Pre-heat the oven 350ºF.
Place parchment paper on a sheet pan and with a spoon add little amounts of dough and flat them a little bit with a spoon. Make sure they are separated.
Cook it til they're golden brown (20 mim aprox., depending on the oven).
Take the sheet pan out of the oven, cut the white chocolate into chuncks and place on top while the cookies are still hot.
Let it cool down. Store the cookies on a air tight container for 7 days.

Eat Love - Zucchini cream with mint&nougat!









Creme de courgette com nougat

Para o creme (serve 4 a 5 pratos)
* 2 courgettes médias
* 1 cebola grande
* 1/2 couve-flor pequena
* hortelã (qb)
* sal qb
* pimenta preta qb
* 2 copos de água quente
* 1 colher de sopa de leite de coco 

Para o nougat
* 1 copo médio mel
* a mesma medida de frutos secos (a gosto)
* 1 pitada de sal grosso

Cortar a courgette, a couve-flor e a cebola e colocar numa panela com água quente temperada com sal e pimenta a gosto. Deixar cozinhar até os legumes ficarem tenros (espetar um garfo para ver o ponto de cozedura). Depois de cozidos passar tudo com a varinha mágica até obter um creme homogéneo. Picar a hortelã, colocar no creme e misturar.
Para o nougat, misturar o mel com os frutos secos partidos aos pedaços. Aquecer a mistura numa frigideira e deitar num tabuleiro forrado com papel vegetal. Levar ao forno pré-aquecido a 180º C e vigiar até os frutos secos dourarem ligeiramente. Atenção para não deixar queimar o mel! Retirar do forno e deixar arrefecer. Partir aos pedaços aleatoriamente.
Servir o creme com uma colher de leite de coco no lugar do azeite e o nougat partido aos pedaços.
