Eat Love - Healthy fried rice!

Desde que comecei a introduzir o arroz integral na minha alimentação não consigo parar de inventar receitas que possam fugir ao arroz cozido. 
Embora eles tenham a mesma origem, o arroz integral contém propriedades nutritivas mais elevadas, e a diferença dá-se pela forma como são tratados ou processados.
Ao arroz integral é-lhe apenas retirada uma camada enquanto o arroz branco sofre um tratamento mais agressivo, sendo polido, branqueado e pré cozinhado (daí muitas pessoas pensarem que o arroz integral parece mal cozido, mas na verdade ele é mesmo assim, "al dente"). Este tratamento faz com que o arroz integral seja consideravelmente mais saudável pela sua quantidade de fibra e sais minerais.
Na receita de hoje decidi adaptar o famoso arroz "xau xau" a uma versão mais saudável e super saborosa!

Since I started to include brown rice on my daily meals I just can't stop trying to create different recipes to substitute the classic boiled rice.
Although they are preety much the same, brown rice has more nutritious properties then the white one, and the difference is due to the way both types are processed. 
With brown rice, only the husk is removed. White rice is polished and pre-cooked or parboiled. The bran is also removed. The bran is kept intact in brown rice, and that bran gives you a healthy dose of fiber.
Today's recipe I decided to recreate the famous fried rice but on a much healthier and tasty way!















































Ingredientes (receita para 2)

* 2 chávenas de arroz integral

* 1 chávena de baby carrots congeladas ( podem usar cenoura fresca ralada)

* 1 courgete grande

* 2 ovos

* 1 colher de sopa de açúcar mascavado

* azeite (qb)

* pimenta preta fresca

* alho em pó (qb)

Cozer o arroz em 4 chávenas de água. Colocar o azeite, os legumes e o alho a saltear até ficarem tenros. Adicionar o arroz já escorrido. Mexer os ovos à parte e cozinhá-los também à parte. Adicionar a colher de açúcar e de seguida os ovos ao arroz e legumes. Mexer bem e servir com pimenta fresca moída.

Ingredients (recipe for 2)

* 2 cups of brown rice

* 1 cup of baby frozen carrots (you can use fresh shredded carrot if you wish)

* 1 big zucchini

* 2 eggs

* 1 tbs of brown sugar

* black pepper (as much as you want)

* garlic powder (as much as you want)

Boil the rice on 4 cups of water. Put the olive oil on a pan and cook the carrots and zucchini and garlic till they get tender. Add the pre-cooked rice. Cook the eggs on another pan. Add the sugar to the rice and vegetables and then add the eggs. Mix it on the wook. Serve with freshly grounded black pepper.

Eat Love - Friday's guilty pleasure #3

Sei que poderá parecer estranho colocar algo tão saudável como um parfait num dia dedicado a receitas menos saudáveis (vá!), mas não consigo deixar de ver esta como um verdadeiro prazer! E já vos disse que era fácil??

I know that it may sound weird putting something so healthy as a parfait e on a day dedicated to less healthier cookings, but I just can't see this recipe other than a trully guilty pleasure! And did I mention how easy is this to make??


























































Ingredientes

* Muesli caseiro (aveia, sementes de girassol, linhaça e goji berries)

* Iogurte grego 

* Mel

Justapôr tudo por camadas num copo à escolha! Básico!

Ingredients

* Homemade muesli ( Oat, sunflower seeds, flax seeds and goji berries)

* Greek yogurt

* Honey

Layer everything on a glass of your choice! Peanuts!

Eat Love - Juicy Mondays!

Muitas pessoas que já por aqui passaram, mostram-se curiosas em relação aos meus sumos/smoothies coloridos, muitos deles verdes e estranhos numa primeira impressão.
Quando descobri que os vegetais se podiam adicionar às frutas e gerar uma combinação explosiva de nutrientes e sobretudo saborosa, confesso que fiquei viciada e posso dizer que raramente fico um dia sem beber uma destas maravilhas!
Achei por bem, e porque já dei um nome guloso à Sexta-Feira, dar um nome nutritivo e prático à Segunda, normalmente o dia mais longo da semana em que o nosso grau de paciência é 0!
Benvindos às "Juicy Mondays"! 

Many of those who  have passed through this blog get curious about my colorfull and strangely green smoothies.
When I found that vegetables could be mixed with fruit and make this awsome and nutritiously delicious juices, I found myself getting addicted to them, and I confess that I rarelly spend one day without one of these wonders!
I thought, since I already gave a guilty pleasure to Fridays, why not give a cool and practical name to Mondays? Usually our worst day of the week!
Welcome to "Juicy Mondays"!









































Ingredientes

* 3 fatias de meloa

* 2 pêras pequenas

* 5 cubinhos de expinafre moído congelado

* 1 copo pequeno de água

* 1 colher de sopa de iogurte grego natural

Juntar tudo numa liquidificadora até ficar cremoso. Adicionar o iogurte por cima. Os cubos de espinafre congelado, para além de serem práticos, tornam o sumo super fresco! Uma delícia é o que vos digo!

Ingredients

* 3 slices of melon

* 2 small pears

* 5 small spinach frozen cubes

* 1 small glass of water

* 1 tbs of greek yogurt

Put everything on a blender and mix it till it's smooth. add the greek yogurt on top. the frozen spinach cubes are very practical and they make your juice super cool!
Amazing, that's waht I tell you!
