Eat Love - Figs&Plums healthy tartines!




Quando falamos numa receita, dá-nos aquela impressão de que vem aí toda uma lista de ingredientes meticulosamente medidos e pesados, prontos para se juntarem passo a passo, atravessarem toda uma jornada de transformações físico-quimicas, e, passados uns largos minutos/horas de confecção se apresentam à nossa frente para finalmente os saborearmos.
Pode parecer que derepente me tornei inimiga destas longas jornadas gastronómicas, não, nada disso. Apenas considero que infelizmente o tempo que reservamos para estes deleites caseiros se tranformou em escassos minutos de folga, onde a nossa imaginação para inventar algo rápido e saboroso se torna absolutamente indispensável para conseguirmos um resultado minimamente decente.
Sabermos escolher os ingredientes certos, com a qualidade e a frescura ideias é, para mim, o fundamental. E no que diz respeito a snacks ultra rápidos que substituem as barras de cereais, bolachinhas de carteira e afins, as quais terei de admitir que muito raramente fazem parte das minhas escolhas, por mais prático que isso possa parecer, há certos ingredientes que para mim se tornaram a chave para um snack irrepreensível.

When we talk about a recipe, we tend to think in a whole list of ingredients carefully measured and meticulously chosen, ready to be cooked step by step, for a long couple of hours to finally be ready to taste them.
It may seem that suddenly I became a slow cooking enemy, no, nothing compared to that. I only know that unfortunately the time that is given to us for these homemade indulgences is close to nothing, where our imagination on creating something healthy and tasty is absolutely mandatory.
Knowing how to choose the right ingredients, with good quality and freshness is for me a priority. And, in the matter of ready to go snacks that replace those processed cereal bars, cookies and so on, those I must admit that rarely make part of my choices, there are certain ingredients that I adopted as the key to a flawless snack.


























O pumpernickel bread, do qual ja aqui falei várias vezes, é um desses ingredientes que na minha opinião deveria existir em todas as dispensas. É do mais saudável que podemos comer (100% centeio integral, linhaça, sésamo, girassol) é saboroso, dura muito tempo pela sua confecção (cozinhado a vapor durante 20 horas) e liga bem com todos os recheios que possam imaginar.

O requeijão. É aquele tipo de queijo que não falta cá em casa, é o "faz tudo" cá do sítio e quando não há mais nada basta tê-lo no frigorífico para ficar de sorriso na cara! Para além de ser ultra rico em proteínas que nos nutrem músculo um a um, tem uma capacidade saciante fora do normal. De manhã, à tarde ou à noite, com mel, compota ou simples, ele é o melhor amigo dos meus momentos mais gulosos.

O mel. Ele é quem me adoça a vida. E embora tenhamos que ter muito cuidado com as quantidades, porque sim, engorda e não é pouco, é o "adoçante" mais seguro, saudável e natural que podemos usar. Cheio de propriedades nutritivas e anti-inflamatórias, o mel ajuda-nos a dar aquele toque reconfortante a qualquer prato. Na aveia, nas barras de cereais caseiras, no leite, na fruta, e até nas saladas e determinados pratos de carne! É único e insubstituível...

A fruta. Qualquer uma, de qualquer forma e época. É a melhor amiga das manhãs e complementa qualquer snack. Neste caso os figos e algumas ameixas, que infelizmente já estão a chegar ao fim, fizeram as delícias deste manjar, simples e delicioso.

The pumpernickel bread, that one that I have talked about a couple of times, it's one of the ingredients that, in my honest opinion, should be on everyones pantry. It's one of the healthiest breads that we could eat (100% whole rye, flax, sesame, sunflower) it's tasty, lasts a long time thanks to the way its baked (long hours on steam) and it goes with almost every topping you find.

Cottage cheese. Is that kind of cheese that doesn't miss at home, is the "handy-man" of all cheeses and when there's nothing more, having cottage cheese in the fridge is enough to keep me smiling! Besides its high protein content that helps to feed our muscles, it also has  high satiating properties. In the morning, afternoon or even at night, with honey, jam or palin, cottage cheese is my best friend on those craving moments.

Honey. Oh honey! Sweets up my life! Although we need to be careful with portions, it seems to be the healthiest sweeter we can eat. Filled with anti-inflamatory properties, it helps to give that comfort touch on every dish! In oats, home-made cereal bars, milk, fruit or even in salads or some meat dishes! It's absolutely unique...

Fruit. Any kind, any season, anywhere...It's my best friend every morning and it complements every snack! This time I choose figs and plums, witch, unfortunately are running out this season. But they really made my day!

Eat Love - Plum Crumble!

Estranho é chegar a casa com esta chuva e não nos querermos enrroscar num cobertor a beber um chá quente e a comer um crumble acabado de fazer...
Depois de algum tempo de ausência, voltei para  uma abertura Outonal cheia de novidades (que mais tarde saberão), e novas receitas super saudáveis!
Como já devem ter reparado, e não devo ser a única, raramente me aventuro pelos ingredientes que não sejam da época. É um hábito que tenho desde que me lembro estar em frente a um fogão, e que, por muito que me possa custar puxar pela imaginação quando tenho 10 kg de ameixas, ou pêras, ou maçãs, ou outro fruto ou vegetal qualquer enfiados no frigorífico, é algo que até me dá um certo gozo. 
Como é da praxe, alguns não se livram de se transformar em compota, e outros vão directos para o congelador, cortados em pedaços para os usar de preferência numa estação contrária - vão-me dizer que não vos dá um gozo tremendo beber um batido de morango no Natal?? Hmm?
Desta vez a cozinha abriu palco às últimas ameixas e abrunhos da estação, transformando-as num crumble digno de uma tarde chuvosa à lareira - só falta a lareira, mas a Trufa ajuda a aquecer...

Strange is... arriving home in this rain not wanting to be wrapped in a blanket while drinking some hot tea and eating a warm, freshly baked crumble...
After some time away, I have returned with a season full of news (that I will share with you later) and new and super healthy recipes!

s you probably have noticed, and I am definitely not the only one, I rarely choose to venture with ingredients that aren't local or seasonal. It's an ethic of mine since I first touched a stove, and as taxing as it can be for my imagination, when I find myself with 10kg of plums, pears, apples, or other fruits and vegetables, it's a process that gives me a certain joy.
Usually
 some of those extra fruits will end up as jam, while others go straight to the freezer, cut into pieces to be cooked another season—isn't it a tremendous pleasure to drink an organic strawberry milkshake at Christmas time? Hmm...
This time my kitchen opens its stage to the last of the plums and sloes, letting me bake the most amazing comfort food—whole plum crumble to be shared on a rainy afternoon by the fireplace—well, since I am lacking a hearth, I think 
Trufa  will help heat our home...

































Ingredientes

Para o recheio

* 15 ameixas ou abrunhos pequenos

* sumo de 1 limão

* 3 colheres de sopa de açúcar mascavado ou mel

Para o crumble

* 2 copos de farinha integral

* meio copo de amêndoas laminadas

* 1 colher de sopa de sementes de chia

* 2 colheres de sopa de linhaça moída

* 3 colheres de sopa de óleo de côco derretido

Cortar as ameixas em pequenos pedaços, regar com o sumo de limão, colocar o açúcar e reservar.
Numa tigela, juntar a farinha, a amêndoa, a linhaça, as sementes de chia e o óleo de côco derretido. Com as mãos amassar a massa até ficar em pedaços areados.
Numa travessa dispor as ameixas e cobrir totalmente com a massa de crumble. Levar ao forno pré-aquecido a 180º e deixar por uns 20min ou até a massa ficar dourada e crocante.

Servir com iogurte grego natural!

Ingredients

For the filing

* 15 small plums

* juice from 1 lemon

* 3 tbs of brown sugar or honey

For the crumble

* 2 cups of whole weet flour

* half cup of sliced almonds

* 2 tbs of grounded gold falx seeds

* 3 tbs of coconut oil (melted)

Cut the plums into small pieces, add the lemon juice, the sugar and save.
On a bowl, mix the flour, the almonds, the flax, the chia and the melted coconut oil. With your hands mix everything toghether till you have a a sand texture with crumbs.
On a platter, put the plum mixture first and add the crumble on top. Pre-heat the oven (350ºF) and bake the crumble till it gets golden crisp brown (aprox. 20min depending on the oven).

Serve with natural greek yogurt on top!

Eat Love - Chickpea salad with egg on top!


Alguém disse que as saladas têm de ser verdes? Esta salada surgiu-me do nada, ou melhor, do pouco que tinha no frigorifico, e, às vezes é quando a nossa inspiração mais voa! Quando há muita matéria prima parece que o cérebro congela com tantas possibilidades. 
Fresca e e nutritiva, como pede um bom Agosto!

Did somebody say that salads are supposed to be green? This one came out of nothing, or , to be honest, out of my fridge remains...sometimes is when our creativity comes out! When we manage to be super stocked is when our brain freezes with so many possibilities!
























Ingredientes

* 1/2 frasco de grão de bico cozido

* 1/2 cebola picada

* 1 pepino

* 4 fatias de queijo Camembert

* 1 ovo

* azeite qb

* vinagre tinto balsâmico qb

* pimenta preta fresca

Despejar meio frasco de grão de bico, lavar e escorrer, reservar. Cortar o pepino às rodelas bem finas e  picar a cebola. Cozer o ovo durante 5 minutos e descascá-lo - a gema terá de estar ainda semi líquida.
Numa tigela dispor o grão, o pepino, a cebola o ovo e as fatias de queijo. Temperar a gosto com azeite, vinagre balsâmico, sal marinho e pimenta preta moída na hora.

Ingredients

* 1/2 jar of chickpeas

* 1/2 choped onion

* 1 cucumber

* 4 Camembert cheese slices

* 1 egg

* 1 tbs of olive oil

* 1 tbs of balsamic vinegar

* fresh grounded black pepper

Wash the chickpeas and put on the side. Cut the cucumber into fine slices and chop the onion. Boil the egg for 5 min and take out the eggshell - the yolk is suppose to be liquid.
On a plate, place the chickpeas, the cucumber, the onion, the egg and the cheese slices. Season with some olive oil, vinegar, sea salt and fresh grounded black pepper.
